"Pitchable" yeast does not typically require the use of a starter, so it saves you time and effort. However, a starter is recommended for for batches larger than 5 gallons or for high-gravity beers. Neutral, low fusel alcohol production. Will ferment to dryness, alcohol tolerance to 18%. Vigorous fermenter. WLP740 is well suited for Merlot, Shirax, Pinot Noir, Chardonnay, Cabernet, Sauvignon Blanc, and Smillon. Alcohol Tolerance: 18%, Attenuation: >80%, Flocculation: low, Optimum Fermentation Temperature: 60-90¦ F
